Recipe for Baked Whole Fish

How do you Bake a WHOLE FISH??? Here's How!


Ingredients:

2 whole fish about 1 1/2 lb each

1/2 lb small onions or scallions

3 average size potatoes

1 lemon

1/2 cup dry sherry or port

1/4 cup olive oil

Small bunch of rosemary

Salt and pepper to taste

Flour as needed

Preparation:

Have the fish scaled and gutted.

Wash and dry them well

Preheat oven to 400o








Cooking:
Mince the onions and sauté them in half of the olive oil on low heat till they turn translucent. In the meanwhile, peel and dice the potatoes in small cubes. Add the potatoes to the onions. Add the rosemary, salt and pepper and cook on low heat. Dredge the two fish in flour. Sautee them in olive oil until they are brown on both sides. Squeeze the lemon on the fish and add 1/2 cup of dry sherry. After the alcohol evaporates (about 3-4 min) cover the fish with the onion and potato mixture. Then place the pan in a pre-heated 400 degree oven for about 20 min.
