Recipe for Cod-Vegetable Medley

Fish-Vegetable Medley

1 pound fish fillets
1 teaspoon salt
1/4 teaspoon pepper
1 package (10 oz) frozen green peas
1 medium cucumber, cut lengthwise into
fourths, then crosswise into 1" pieces
1 medium stalk celery, cut diagonally
into 1/4 in slices (about 1/2 cup.
1 small onion cut into 1/4 in slices
1/2 teaspoon salt
1 tablespoon lemon juice
1/4 cup margarine or butter


If fish fillets are large, cut into 5 or 6 serving pieces. Arrange fish in ungreased oblong baking dish, 12x7.5x2 or 2 quart casserole. Sprinkle with 1 teaspoon of salt and the pepper. Rinse frozen peas under running cold water to separate; drain. Spoon peas, celery, cucumber and onion onto fish; sprinkle with 1/2 teaspoon salt and lemon juice. Dot with margarine.
Cover and cook in 350 degree oven until fish flakes easily with fork, 20-30 minutes. Sprinkle with paprika and garnish with lemon wedges if desired. 5 or 6 servings. OR To microwave: Place fish in ungreased 2 quart glass casserole; sprinkle with 1 teaspoon salt and the pepper. Cover and microwave until fish is almost done, 3.5 to 4 minutes. Continue as above except-cover and microwave until vegetables are crisp-tender and fish flakes easily with fork, about 6 minutes.
