Recipe for Flounder Thyme

1-1/2 lbs. flounder or sole fillets
2 Tbs. plus 2 tsp. low calorie mayonnaise
1/2 tsp. dried thyme
1/8 tsp. lemon peel, grated
2 Tbs. dry breadcrumbs, or wheat germ

Preheat oven to 350°F. Place fish in a lightly oiled shallow baking pan. Combine next 3 ingredients and salt and pepper to taste in a bowl. Spread mixture evenly over fillets. Sprinkle with breadcrumbs. Bake uncovered, 30 minutes, or until fish flakes easily.
