Recipe for Haddock Pizzaiola

1 1/2 pounds haddock fillets
Non-stick spray
1 tablespoon Italian Classics Extra Virgin olive oil
1 green bell pepper, trimmed, seeded, and thinly sliced
1 Spanish onion, thinly sliced
1/2 cup shredded asiago cheese
1 jar 26 ounces, Italian Classics Sun-Ripened Dried tomato sauce

Directions:
Preheat oven to 425 degrees farenheit. Spray 9x13 inch baking dish with non-stick spray. Place haddock skin side down in baking dish; bake for 8 minutes. Heat oil in a large non-stick skillet on medium high. Sauté onions and peppers 2 to 3 minutes until almost tender. Add sauce; turn heat down to low and simmer for 6 minutes. Cover haddock with sauce; sprinkle with cheese. Return to oven for another 8 to 10 minutes or until bubbly.
