1-5 lbs King Mackerel fillets-cut into pieces as big as your hand or smaller
1-2 green bell peppers- cut in long strips
1 large onion - cut in strips
1 lrg tomato- thinly sliced
1 handful grated cheese- either cheddar or jalapeno jack
salt
garlic powder
black pepper
paprika
cilantro
parsley
salsa (optional)
bacon bits (optional)
Cover a baking pan with foil. Spray non stick on foil. Lightly cover the foil with all of the seasonings. (before you place the fish.) Pace the fish on the foil (skin side down if it has skin). Lightly cover the fish with the same seasonings.
Here is where the experimenting comes in:
divide your pan into 2 or 3 sections. On 1 section put some cheese, on another section spread some salsa, on the 3rd section put cheese and bacon bits. On top of all of this place your peppers and onions and tomatoes. Use your imagination with the different combinations. You can not go wrong.
Place in a hot oven @ 375 degrees for approx. 12-15 minutes. If the fillets are thick it may take an extra minute or two. Do not be scared to cut the fish in the thickest part to check. Remember it is better to undercook and have to put it back in the oven, than to overcook your fish.
