Recipe for Lobster Thermidor

Serves 4 - 6
1/4 cup butter or margarine
4 tablespoons flour
1 cup chicken broth
1 cup light cream
2 tablespoons white wine or sherry
1/2 teaspoon salt
1/2 teaspoon cayenne
2 to 2 1/2 cups coarsely chopped, cooked lobster meat
1/2 cup grated Parmesan cheese
Heat oven to 350°F. Grease a 1 1/2 quart baking dish with margarine or butter.

Melt the butter or margarine, blend in the flour, gradually add the chicken broth and the cream. Stir and simmer about 3 minutes, until the mixture is thick and smooth. Add the lobster meat, wine, salt and cayenne.

Pour the mixture into the baking dish and sprinkle with the cheese. Bake 15 or 25 minutes.
