Recipe for Opening-Day Trout

1 Tbs. plus 1 tsp. unsalted butter
4 slices onion
1 lemon slice
4 whole trout, dressed, head and tail removed and filleted if desired
toothpicks

Preheat oven to 375°F. Place butter, onion, lemon and black pepper to taste in inner cavity of trout and secure with a toothpick. Arrange in a baking dish and bake 15-20 minutes or until fish flakes easily.
