Serves 6
2 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons butter or margarine
1 cup chopped drained fresh or frozen oysters
1/2 cup oyster liquor, chilled
10 small pork sausages
Heat oven to 450° F. Grease a small shallow pan with margarine or shortening.
Mix the flour, salt and baking powder. Using a pastry blender, work the butter or margarine into the flour, then add the oysters and oyster liquor. Stir only until ingredients are blended.
Spread the batter in the baking pan. Pierce the sausages with a fork and arrange them on top of the batter. Bake 20 minutes. Lower heat to 350° F and bake 10 to 15 minutes more.
