2 - 3 to 4 ounce Permit fillets
Salt and Pepper to taste
2 Tablespoons Butter
2 Tablespoons Lemon Juice
2 cups Tomato Juice
½ teaspoon Garlic Powder
Hot Peppers to taste
1 medium Onion, diced
½ cup Bell Peppers, diced
½ cup Mushrooms, sliced
½ cup Mozzarella Cheese, shredded
½ Tablespoon dried Parsley Flakes
Place the fillets on lightly greased aluminum foil in a shallow pan. Sprinkle with salt and pepper; add the lemon juice and butter. Bake at 400°F for 20 minutes.
In a saucepan, minx the tomato juice, garlic powder, hot peppers, onion, bell peppers and mushrooms. Simmer for 15 minutes.
When the fish is done, remove it from the oven and cover it with the sauce, cheese and parsley. Return to the oven, and bake until the cheese is melted.
Makes 2 servings.
Delicious when served with noodles.
