2-3 pounds Hard Clams
Place washed clams in a single layer on a roasting pan or a baking sheet with sides. Roast in a 350 degree oven for about 10-12 minutes, depending on size of clams. When clams open, remove them from oven and serve with cocktail sauce, drawn butter or the following vinegar dipping sauce.
Vinegar Dipping Sauce
½ cup cider vinegar 1 teaspoon salt
1 teaspoon minced garlic 1 teaspoon fresh cracked black pepper
½ cup green onions, finely chopped ¼ cup tomatoes, finely chopped
Mix all ingredients together. Serve with roasted clams.
Yield: 2 to 4 servings.
