Serves 4
2 dozen fresh or frozen oysters or 3 dozen fresh or canned clams
2 tablespoons butter
2 tablespoons lemon juice
1 tablespoon onion juice
1/8 teaspoon Tabasco Sauce
2 cups flaked cooked fresh cod
1/4 cup oyster juice
1/4 cup buttered bread crumbs
Heat oven to 450° F. Rub a baking dish with butter.
Melt the butter in a saucepan, add the lemon and onion juice and the Tabasco Sauce. Dip the oyster or clams in the butter mix.
Arrange a layer of fish in the baking dish. Place the oysters or clams on top of the fish, cover with the rest of the cod and pour in the oyster juice. Top with the buttered bread crumbs. Bake 20 minutes. Serve with Tartar sauce.
