1 pound fish fillets, firm fish is best (sea bass, cod, orange roughy, halibut, etc.)
2 cloves garlic, minced
1 small knob fresh ginger, minced
1/2 onion, cut into pieces
1 bell pepper, cut into pieces
1 to 2 tomatoes, cut into pieces
1 (15 oz.) can pineapple chunks, drained and saving the juice
1 tablespoon tomato paste
1 tablespoon soy sauce or Chinese Marinade
1 tablespoon sugar
1 tablespoon vinegar
1-1/2 tablespoons cornstarch
2-3 sprigs fresh cilantro
1-2 slivered green onions
Arrange fish in flat casserole, or fish platter. Sprinkle garlic and ginger over. Cover with waxed paper. Microwave on full power 3-5 minutes, or until fish flakes easily. Set aside. Place onions and bell pepper in covered dish such as "ugly pot". Microwave on High 2 minutes. Add pineapple chunks and tomatoes and microwave 1-2 minutes to heat through but not to cook the tomato very much. Set aside. In measuring cup, combine 1/2 cup pineapple juice, tomato paste, soy sauce, sugar, vinegar, and cornstarch. Whisk well. Microwave 1 minute and whisk. Microwave another 1-2 minutes to thicken. Blend sauce into vegetables, and pour over fish. Microwave 1-2 minutes to heat thoroughly. Garnish with cilantro and slivered green onions.
