Serves 4
2 pounds fresh cod fillets, cut into 4 pieces
2 small onions, minced
3 tablespoons butter or margarine
3 tablespoons flour
2 cups drained canned tomatoes
1/4 cup minced green pepper
3/4 teaspoon salt
1/2 teaspoon celery salt
1/4 teaspoon pepper
Heat oven to 375°F. Rub a baking pan or dish with butter or margarine. Arrange the steaks in the baking dish.
Sauté the onion in the butter or margarine until tender. Stir the flour in and blend smoothly. Add the tomatoes and green pepper and heat to boiling over medium heat, stirring constantly. Remove from heat. Add the salt, celery salt and pepper; mix well. Pour mixture over the fish.
Bake 20 to 30 minutes or until fish flakes easily when tested with a fork.
