Recipe for Vegetale-Topped Fish Pouches

VEGETABLE-TOPPED FISH POUCHES


4 firm fish fillets (flounder, cod or halibut), (about 1 lb.)
1 carrot, cut into very thin strips
1 rib celery, cut into very thin strips
1 medium red onion, cut into thin wedges
1 medium zucchini or yellow squash, sliced
8 mushrooms, sliced
1/2 cup shredded Swiss cheese (about 2 oz.)
1/2 cup Wish-Bone Italian Dressing

On four 9 x 18-inch pieces heavy-duty aluminum foil, divide fish equally. Evenly top with vegetables, then cheese, then Italian dressing. Wrap foil loosely around fillets and vegetables, sealing edges airtight with double fold. Let stand to marinate 15 minutes. Grill or broil pouches seam-side-up 15 minutes or until fish flakes. Makes 4 servings.
