Recipe for Broiled Fillet of Sole with Lime & Old Bay

For 6 to 8 medium-sized fillets
1 to 2 fillets/person (depending upon size of fillet and the appetites of guests)
Juice from 2 limes
8 to 10 saltine crackers
2 tsp Old Bay Seasoning
4 Tbsp cold butter - cut in bits

Pre-heat broiler
Line a baking sheet with foil. Roll the saltine crackers until they are fine crumbs. Mix with the Old Bay Seasoning. Wash the fillets and pat dry with paper towels. Place on baking sheet with a little space between each fillet. Sprinkle the lime juice over the fish and then sprinkle the seasoned cracker crumbs over the top and dot with the butter.

Broil on rack closest to the heat source (in pre-heated broiler). It will take about 5 to 7 minutes to cook, depending on thickness. If the crackers seem to be browning too much, then move the rack a notch further from the broiler unit.
DO NOT TURN THE FILLETS.
