Recipe for Broiled Snook

2 pounds snook fillets
Dijon mustard
mayonnaise
freshly grated Parmesan cheese
parsley sprigs for garnish

Place fillets, skin side down, on foil-covered baking sheet. Spread half the fillets with thin layer of mustard; cover other fillets with mayonnaise and sprinkle generously with cheese. Broil, 5 inches below heat source, until fish flakes when poked with a fork, usually less than 10 minutes. Garnish with parsley.
