2 c. flaked, cooked fish (any variety)
1/3 c. bread crumbs
1/3 c. chopped celery
1/4 c. shredded cheese
3 tbsp. chopped onion
2 tbsp. fine chopped dill pickle
3 tbsp. mayonnaise
1 tsp. mustard
1/2 tsp. lemon juice
1 egg, beaten
Combine fish, celery, cheese, onion, pickle, and bread crumbs. Blend together mayonnaise, mustard, lemon juice, and beaten eggs. Stir into fish mixture and form 4 patties. Broil for 3 to 5 minutes on each side. Serve on hot toasted buns.
1 lb. frozen or fresh fish (haddock,
orange roughy)
1 c. grated Cheddar cheese
1/3 c. dried bread crumbs
1 egg
1 tbsp. minced onion
1 tbsp. minced fresh parsley
1 tsp. minced garlic
1/2 tsp. salt
1/4 tsp. pepper
Cook fish by boiling or in microwave until opaque. Drain, flake and add rest of ingredients. Make into patties; makes 4. Can be frozen at this point. Fry, serve with mayonnaise or tartar sauce.
