Flavour these fillets with any number of glazes. Serve with green beans and rice pilaf
4 Halibut, haddock or cod fillets
1/3 cup Light mayonnaise
4 tsp Prepared pesto
Place fillets on greased or foil-lined rimmed baking sheet. Stir mayonnaise with pesto; spread over fish. Broil for 5 minutes or until golden and bubbly and fish flakes easily when tested with fork.
Makes 4 servings.
Tip: Vary the flavour of Glazed Fish Fillets by substituting any of the following toppings. To 1/3 cup light mayonnaise, add:
• 2 tbsp finely chopped black olives, 1 tsp grated lemon rind, 1 tbsp lemon juice, 2 tsp chopped fresh thyme and pinch pepper.
• 2 tsp finely grated gingerroot and 2 green onions, chopped.
• 4 tsp finely chopped drained oil-packed sun-dried tomatoes and 2 tsp chopped fresh parsley.
