Italian Trout
About 2 pounds trout (use small fish)
1 pound package of wide egg noodles
1 can cream of mushroom soup
1 stick butter
2 stalks fresh chopped green onion
2 cloves finely minced garlic
1 small carrot (coarse shredded)
Melt butter and add garlic to make strong garlic butter. Broil trout. You may top with a dab of garlic butter and seasoned salt before broiling, if you wish. Boil egg noodles. Just before they are done toss in the shredded carrot so that it gets tender. Drain and rinse noodles. Mix in garlic butter until it melts, then mix in the mushroom soup and the green onion.
Serve the trout on a bed of noodles. Serve with a wedge of lemon if desired.
Recipe works with any rich fish but is best with fresh caught trout.
