Recipe for Lemon-Broiled Orange Roughy

4 orange roughy fillets, 4 0z/ 113 g each
1 1/2 tbsp/25 mL lemon juice
2 1/2 tsp/12.5 mL onion-flavored mustard
1 tsp/5 mL grapeseed oil or similar oil
1/4 tsp/1.2 mL lemon pepper
lemon slices and fresh parsley, optional

Place fillets on rack of broiler pan coated with cooking spray.
Combine lemon juice, Mustard, Grapeseed Oil and Lemon Pepper; brush
mixture over fillets. Broil fillets 5 inches/ 13 cm from heat for
8 to 10 minutes or until fish flakes easily when tested with fork.
Transfer to serving platter. Garnish with lemon slices and fresh
parsley.

Serve with whole grain pasta and a tossed green salad. Makes 4
servings.
