1½ pounds Florida tilefish fillets 2 teaspoons minced Florida garlic
1½ cups diced Florida yellow bell pepper 1 teaspoon black pepper
1½ cups diced Florida green bell pepper 1 teaspoon salt
2 cups cooked yellow rice 1 teaspoon ground cumin
1 tablespoon paprika
Cut fish into approximately 2" x 2" pieces. Mix bell peppers with cooked rice; set aside and keep warm. In mixing bowl combine paprika, garlic, pepper, salt, cumin and fish. Mix ingredients until fish is coated well. Place fish on a lightly oiled broiler pan and broil 4 to 6 inches from heat for 5 to 6 minutes on each side. Fish is done when it flakes easily when tested with a fork and is opaque in the center. Serve immediately with yellow rice.
