1/2 c. grated Parmesan
1/4 c. margarine, softened
3 tbsp. mayonnaise
3 tbsp. chopped green onions
1/4 tsp. salt
Dash hot pepper sauce (like Tabasco)
2 lb. fish fillets, skinned
2 tbsp. lemon juice
Combine first 6 ingredients in small bowl; set aside. Place fillets in single layer on well-greased broiler pan or casserole dish. Brush fish well with lemon juice. Broil 4 inches from direct heat or flame for 4-6 minutes. Remove from broiler and spread mixture on fillets. Broil 2 minutes or until lightly browned. Makes 6 servings. In view of so many health problems in our nation I have tried to find some alternative cooking methods other than the ones my parents used when rearing us children in the recesses of Clay County, WV. Fish has been one of my favorite foods. As a kid I spent many hours at the old fishing holes in Groves and Buffalo Creeks. In all of my 82 years I've never grown tired of casting a line or of feasting on the rewards. I catch them and Jessie cooks them.
