3 qt Water
1/2 c Salt
1/2 c Sugar
4 Pounds of cod, cut into 6
Or 8 pieces
Butter
Bring water, salt and sugar to boiling; remove from heat and add cod. Cover
and let stand for 15 minutes. Drain carefully; pat dry with paper towels.
Place cod on foil lined broiler pan or 15x10x1 inch pan. Butter generously;
broil 3 to 4 inches from heat until lightly browned. Serve immediately with
melted butter.

1 med. onion
Salt to taste
1/2 c. lemon juice
3 stalks celery (diced)
3 lbs. Fish fillets (your choice) cut in 2 inch pieces
1/2 lb. butter
Garlic salt (optional)
Paprika
Place water, onion, salt, lemon juice, and celery in 4 quart pan; bring to boil. Add fish and reboil for 3 minutes. Drain and place fish on cookie sheet. Brush with melted butter/garlic butter. Sprinkle with Paprika. Broil for 2 minutes. Serve with melted butter/garlic butter.
