Recipe for Rainbow Trout with Apricot Glaze

Sweet fish under caramelized glaze with tang of mustard.

2 tsp. margarine, melted
4 tbsp. Apricot Spread (Featherweight
Brand)
2 tsp. stone-ground mustard
4 (4 oz.) fillets rainbow trout, or
other firm fish

Preheat broiler and 9 x 9 inch baking pan. Melt margarine and stir in Apricot Spread and mustard. Place fish in pan and top with half of glaze. Broil 5 minutes, then brush on remaining glaze and broil 3 more minutes on same side.
