2 lb. skinned fish fillets (white
fish, orange roughy, etc.)
2 tbsp. lemon juice
1/2 c. grated Parmesan cheese
1/4 c. butter, softened
3 tbsp. mayonnaise
3 tbsp. chopped chives or green onion
1/4 tsp. salt
Dash of Tabasco
Place fish, single layer, on greased broiler pan. Brush with lemon juice. Combine Parmesan, butter, mayonnaise, green onion, salt, and Tabasco. Set this aside. Broil fish 4-6 minutes until fish flakes with a fork. Remove fish from broiler. Spread with cheese mixture. Broil 2-3 minutes or until lightly browned.
