Recipe for Sesame-Broiled Haddock

Sesame-Broiled Haddock
2 tbsp vegetable oil
1/4 tsp toasted sesame oil
6 haddock steaks (about 1-inch thick)
Salt and freshly ground black pepper, to taste
2 tbsp sesame seeds
Lemon or lime wedges, for garnish


1. Preheat the broiler to high. In a small bowl, mix together the vegetable oil and sesame oil. Brush or drizzle the oil mixture on the fish steaks, then sprinkle them with salt and pepper.

2. Place fish steaks in a broiler pan, and broil, turning them once with a spatula, until the steaks are browned on the outside and almost, but not quite done to taste inside, about 3-5 minutes per side. Sprinkle the sesame seeds over the fish and broil for 1 minute longer to finish cooking the fish and toast the sesame seeds. Serve immediately, garnish with the lemon or lime wedges.
