(Also good with Salmon, Swordfish, Marlin or Mahi, Mahi)
4 Tuna Steaks (1/2 lb. each)
1/4 lb. butter
2 tbsp. Flour
1 1/2 cup Clam Juice
1/2 cup Whipping Cream
1/2 cup Shredded Swiss Cheese
1/2 cup Shredded Parmesan Cheese
Melt butter in sauce pan and add flour-heat until mixture is bubbling-remove from heat and add Clam Juice & whipping cream-put over heat again and cook until thickened (stir while heating)-after this mixture is heated add Shredded Swiss Cheese and Shredded Parmesan Cheese-heat this mixture until cheeses have melted.
This sauce can be poured over your cooked fish-use with Salmon, Tuna, Swordfish, Marlin or Mahi. The cheese used in the sauce can be changed to suit you taste. For a more cheesy taste use sharp cheddar in place of the mild Swiss. A very nice change for a grilled fish is to use a smoked cheese in place of the Swiss cheese.
