Dutch Oven or Deep Pot
Everglades Seasoning
Peanut Oil
Cayenne Pepper
2 Lbs Fish
Black Pepper
2 Medium Bowls
Salt
2 Eggs
Corn Meal
In one bowl, mix everglades seasoning, cayenne pepper, black pepper, and salt, with corn meal.
In second bowl, pour 2 tablespoonsTabasco sauce in with eggs, stir thoroughly. Cut fish into 1” strips. Dip fish into egg mixture, then dip in corn meal mixture. Lay fish strips on wax paper, and chill in refrigerator for 15 minutes.
After fish strips are chilled, dip fish into egg mixture, once again. Then dip fish strips in corn meal mixture for second coat of batter.
While you are doing this, your peanut oil should be heating to 400º. Drop a few pieces of fish in at a time, so that the temperature won’t drop below 375º. Let fry until they float.
Remove from oil and drain, before serving.
