Recipe for Cod Fish Cakes

1 lb. salted fish
6 to 8 potatoes
1/2 tsp. pepper
2 eggs
Vegetable oil for frying

Place cod fish in bowl. Cover with water and soak for several hours. Drain and cut into 3/4 inch cubes. Peel potatoes and cut into 3/4 inch cubes. Boil potatoes until tender. Mash potatoes and fish together. Add pepper and eggs. Deep fry large spoonfuls of mixture, turning, until brown. Place on paper towel and drain while keeping warm.

2 pieces dried cod fish, soak
overnight in cold water*
1 green pepper, washed & chopped
1 onion, peeled & chopped
About 1/4 tsp. black pepper
1 egg, well beaten
2 tbsp. flour (opt.)
1/2 c. oil for frying

NO SALT PLEASE! Change water 1 or 2 times. Pound fish with mallet or pound on side of table. This loosens fish meat and softens it. Flake fish well. Add next 3 ingredients; mix very well. Stir in flour if using and beat in egg. Shape into ovals about 1/4 cup mixture. Have oil hot. Flatten fish cake in pan. Fry until golden brown, turning once.
