Recipe for Smothered Grouper (Grouper Stew)

2 lbs of boneless, filet grouper "meat"
3 red peppers (fresh)
3 tbsp of salt
2 limes
1 tbsp of tomato paste
1/2 tbsp of flour
1/2 tbsp of thyme (fresh)
1/2 med onion (sliced)
1/4 cup of oil (vegetable)
1/2 cup of water

Crush red peppers in salt (creating a salt-n-pepper paste). Season fish with salt and hot pepper mixture. Add lime juice to fish. Marinate for 25 minutes. Fry fish, browning both sides. (Deep frying , preferable). In separate pan, brown flour in hot oil for one minute. Add onions, cook for 1 minute. Add tomato paste and thyme and cook mixture an additional minute. Add a 1/2 cup of water. Add fish to sauce. Cover pan and simmer for about 8 to 10 minutes. Season to taste.
