Take Flounder, Clean to your liking, fillets, whole fished boxed, with tail & skin, etc. Season both sides with Everglades Seasoning, completly cover in self rising flour, heat grease on medium to high (6-7) fry dark brown on both sides quickly. If leaving skin on filets, fry meat side first. You will have a very crispy crust with a evenly cooked fish. This is the way it's done down here.
