Serves 2:
1 egg white
1/2 c corn starch
several tablespoons of water
3/4 lb whitefish fillets
hot peanut oil
duck sauce
Chinese mustard
Mix egg white with 4 tbsp water. Add cornstarch, a tablespoon at a time, until batter is a good consistency. Chill batter while heating oil to 375 degrees. Coat fish in batter and deep fry in hot oil until golden and floating. Serve with hot and white fluffy rice, and offer duck sauce and Chinese mustard.
