Ingredients:
Dolly Varden (Charr) fillets
Lettuce Leaves
Fresh herbs-dill, thyme, marjoram, tarragon
Condiment of choice
Divide fillets into serving-size portions. Place a fillet on a large lettuce leaf and top fillet completely enclosing it. (if necessary, lightly wilt lettuce in hot water before wrapping fish.) Repeat with remaining fillets. Preheat gas barbecue to medium-high heat. Close lid and cook until fish is just opaque, 7 to 10 minutes. Discard lettuce and serve with condiment of choice.
