Serves 4 - 6:
Fresh bass or crappie fillets (or your
favorite fish)
1 (6 oz.) jar taco spice
Black pepper to taste (the more the
hotter)
Butter
Pat fillets dry; dip in melted butter, then place in "shaker" bags with taco spice and pepper mixture. Fry in butter in skillet or drizzle butter over coated fillets and bake in oven. Serve with rice and lots of water.
Skinned, filleted fish (your choice)
Melted butter
2 tbsp. salt
2 tbsp. paprika
1 tbsp. garlic powder
1 tbsp. onion powder
2 tsp. red pepper & cayenne
2 tbsp. ground black pepper
2 tsp. ground thyme
2 tsp. oregano
2 tsp. ground coriander
2 tsp. seafood seasoning
2 tsp. Creole seasoning
Mix seasonings together and generously sprinkle onto the fillet, rubbing mixture into the meat. Dip the seasoned fillet into the melted butter. Using a very hot skillet, cook approximately 2 minutes per side. Can also be cooked on the grill. Blackened seasoning works well with meats also.
