Blue Fish Fillets (10-12 oz. each)
2 Apples (tart)
1 Onion (sweet)
Butter or Vegetable Oil
1/4 cup Honey Mustard
Salt & Pepper (to taste)
1/2 pint Sour Cream Cracked Pepper corns
This is best done with smaller size fish-use fillets, which are about 10-12 oz. each. This will cook very well on a grill.
Peel and core 2 tart cooking apples (slice into thin slices). Peel and slice a large sweet onion (slice into thin slices). Sauté the onion in a large pan using butter or vegetable oil. When the onions have started to carmalize add sliced apples cooking for 6 minutes. Then add honey mustard & salt and pepper to taste. Bring to a boil cook two minutes-remove from heat and blend sour cream to this mixture. While you have been cooking this sauce you will have grilled the Blue Fish seasoned with cracked peppercorns and salt. Lastly, onto a plate make a bed of the onion and apple slices-place fish on this bed and then pour over the sauce mixture.
