Recipe for Charcoal Grilled Spanish Mackerel


3 lbs. dressed mackerel
1/2 cup lemon juice
1/4 cup olive oil
1 tsp. salt
1 tsp. dried oregano leaves, crushed
3/4 tsp. garlic salt
1/2 tsp. pepper

Combine lemon juice, olive oil, salt, oregano, garlic salt and pepper for sauce.
Make 4-5 shallow slits on both sides of each fish; brush inside and out with
sauce. Place fish on well-greased hinged wire grills, cook about 4 inches from
moderately hot coals for 5 to 8 minutes. Baste with sauce, turn and cook 5 to
8 minutes longer or until fish flakes easily when tested with a fork.
