Recipe for Flounder Wrap-Ups

Serves 6:
Aluminum foil
6 fish fillets (your choice), 1/3 lb. each
Freshly ground pepper
6 tbsp. mayonnaise
2 tbsp. spicy prepared mustard
1 tsp. lemon juice
Thyme to taste
1/2 lb. fresh mushrooms, chopped
1/4 c. chopped green onions
6 tbsp. margarine
Paprika

Start grill or preheat oven to 325 degrees. Make 6 squares of aluminum foil 12x12 inch each. Put one fish fillet in the center of each square and sprinkle with pepper. Combine the mayonnaise, mustard, lemon juice, and thyme in a bowl. Put a heaping tablespoon of this mixture in the center of each fish fillet. Sprinkle mushrooms; then onions over each fillet. Fold each fillet in half to enclose the filling. Put 1 tablespoon of margarine on top of each portion and sprinkle with paprika. Fold the foil toward the center and press to make 6 airtight packages. Set on grill or bake for 25 minutes. Fish should be opaque when done.
