Serves 2
2 live lobsters, about 1 pound each
2 tablespoons butter, softened
1 teaspoon paprika
Salt and pepper to taste
1 lemon, quartered
Plunge the live lobsters into vigorously boiling water. Boil for four minutes, remove the lobster and allow to cool enough to be handled. Split the lobsters lengthwise through the middle and rinse out entrails. Make a mixture of the softened butter, paprika, salt and pepper and brush half of the mixture on the cut flesh of the lobster. Place the lobster halves, flesh side down, over medium-hot coals and broil for six minutes. Turn the lobster halves, and brush on the remainder of the butter mixture and finish broiling until the flesh is opaque, about 10 minutes. Garnish with lemon quarters and serve at once with melted butter.
