6 8 ounces halibut steaks
1 tablespoon grated lemon rind
1/2 cup fresh lemon juice
1/4 cup olive oil
1/4 cup Dijon mustard
3 tablespoons finely chopped fresh tarragon
2 tablespoons finely chopped green onions
1/4 teaspoon pepper
Garnishes: Lemon Slices, Fresh
Tarragon Sprigs
Combine lemon rind and next 6 ingredients in a small bowl; stir well. Place steaks in heavy plastic bag; pour marinade over steaks. Seal bag securely; place in refrigerator 30 minutes.
Remove steaks from marinade, discarding marinade. Grill, covered, over medium-high coals 5 to 7 minutes on each side or until fish flakes easily when tested with a fork. Garnish, if desired.
Note: The Total Fats shown below in incorrect as you are throwing away the marinade not eating it.
FOR ONE SERVING: make up same marinade but just use 1 8oz steak
