Recipe for Grilled Redfish

1 tablespoon white wine vinegar
1 1/2 tablespoons chopped fresh sage
salt and pepper to taste
1/4 cup olive oil
1 pound red fish fillets

Whisk vinegar and seasonings together. Gradually add oil, whisking until emulsified. Prepare grill by spraying with cooking spray. Place fillets on grill, baste with sauce and grill, turning once and basting. Fish should flake easily when probed with fork.
