2 lbs. Snapper
Cajun Seasoning
Spicy Salsa
Red, Green & Yellow Peppers (Diced)
Real Hot Peppers (Diced)
2 cups Tomatoes (Diced & Seeded)
Lime Juice
Onion (Diced)
Butter
Salt & Pepper (to taste)
Hot Sauce (Few Dashes)
Sauté above ingredients in butter until peppers are tender. Keep warm while you are grilling the Snapper. Coat your Snapper with melted butter and a good Cajun Seasoning. Cook on a hot grill turning once. When done place Snapper on a bed of white rice and pour some of the warm salsa over your fish.
