Ingredients:
1 small red onion, finely diced
1 Tbsp minced garlic
4 Tbsp Italian Classics Olive Oil
1 can (15.5 oz) Italian Classics Cannellini Beans, drained
1/4 cup fresh lemon juice
1/2 cup chopped Italian flat leaf parsley or arugula
4 swordfish steaks (blue marlin can be substituted)
2 Tbsp Italian Classics balsamic vinegar
Directions:
Sauté onion and garlic in medium skillet over stove top in 2 Tbsp olive oil until softened.
Add beans; sauté 2 min. Stir in lemon juice and parsley or arugula; heat through. Season with salt and pepper to taste; set aside. Brush swordfish with 2 Tbsp olive oil; sprinkle with salt and pepper. Preheat grill to HIGH. Grill fish in fish grilling basket 3-6 min per side, turning once until fish reaches 140 degrees.
Place cooked bean mixture on serving plate. Arrange fish on top and sprinkle with balsamic vinegar.
