Recipe for Grilled Swordfish with Balsamic Onion Sauce

Ingredients:
1/4 cup plus 2 tablespoons Italian Classics Extra Virgin olive oil
2 medium red onoins, thinly sliced
1/2 cup chicken stock
1/4 cup Italian Classics balsamic vinegar
6 swordfish steaks, about 2 pounds
Pepper to taste
Salt to taste
Directions:
1. In a large saucepan over medium heat, sauté onion in 1/4 cup of olive oil for 2 minutes. 2. Add chicken stock; simmer for 5 minutes. If the mixture becomes too dry, add more chicken stock. Add balsamic vinegar and cook 3 more minutes. Set aside. 3. Sprinkle swordfish with salt and pepper and drizzle with remaining 2 tablespoons of olive oil. Grill (or broil) over high heat about 5 minutes per side. Top with balsamic onion sauce.
