1 pound swordfish
2 cups fresh basil
2 cloves garlic, chopped
2 oz pine nuts
Salt and Pepper
1/2 cup Parmesan Cheese
1/2 cup olive oil
1. Wash the swordfish and pat dry.
2. Place the basil, garlic, pine nuts and 1/2 teaspoon salt in a food processor or blender, blend to a paste. Add the cheese and grind until blended completely. With the machine on slow, add the oil. Add salt and pepper to taste.
3. Place the fish in a medium to large glass bowl and pour the 1/2 the pesto over the fish. Cover and marinate in the refrigerator for 1 hr.
4. Light a grill and grill the fish for 5 to 7 min. on each side until cooked.
5. While the fish is cooking, add the rest of the pesto in a sauce pan and heat on medium to low heat until warm. When fish is done return it to a plate and pour warmed pesto around the fish. Top with a few basil leaves for garnish.
