Serves 6
6 tuna steaks
3 tbsps dark soy sauce
tbsp sake
2 tbsps mirin
½" ginger root
1 clove garlic
Grate the ginger and garlic clove and mix together with the soy sauce, sake and mirin. Wipe the tuna with a damp cloth and put them in the marinade for 15 minutes, turning once. Heat the grill. When hot put in the tuna and grill for about 5 minutes on each side. Just before removing brush the tuna with the marnade once more. Remove as soon as the sauce has dried into a high glaze. Serve immedietely.
