Recipe for Marinated Tuna Steaks

1/4 cup olive oil
1/4 cup dry white wine
1 tsp. lime zest, finely shredded
1 Tbs. capers, drained and rinsed
1/4 cup shallots, finely chopped
4 8 ounce fresh tuna steaks
1/2 lime, cut into wedges

Combine first 5 ingredients in a bowl. Mix well. Place tuna in a shallow baking dish. Pour mixture over. Turn steaks to completely coat with marinade. Cover and marinate in refrigerator 8 hours or overnight, turning occasionally. Prepare grill or broiler. Remove tuna steaks from marinade and pat dry. Reserve marinade. Broil or grill tuna on an uncovered grill 4-5 minutes per side, brushing frequently with marinade, until tuna is just cooked through. Serve with lime wedges.
