Serves 4
4 sheets (12x18in) Reynolds heavy duty aluminum foil
1 10oz pkg. frozen Corn thawed
1 lb. med. uncooked shrimp, peeled and deveined
1 c. salsa
4 tsp. Butter
1 tsp. roasted Garlic Oil or olive oil
1 tsp. Chicken Bouillon Granules
1 tsp. Chili Powder
2 c instant brown rice.
Preheat oven to 450 degrees or grill to high heat. Center 1/4 of corn on each piece of foil. Top with shrimp and salsa. Drizzle with lime juice and oil. Wrap and seal foil to form four packets. Bake 14-18 minutes on a cookie sheet or grill for 12-16 minutes on high in a covered grill. To prepare while packets are grilling, combine bouillon granules, chili powder and brown rice; cook following package directions. Serve with chili rice.
