Recipe for Steak Fish and Veggies Santa Fe

Prep Time: 30 minutes.

Ingredients:
2 red peppers, seeded and cut into 1 1/2 inch pieces
1 zucchini, cut across into 1/2 inch rounds
1 pound steak fish (swordfish, marlin, salmon or tuna), skinned and cut into 1 to 1 1/2 inch cubes
1/2 cup Wegmans Santa Fe Marinade
12 baby bella mushrooms
12 baby red or white-skinned potatoes, parboiled or microwaved until firm-tender
1 Vidalia onion, peeled and cut into 1 1/2 pieces
Directions:
Thread vegetables and fish on skewers.
Pour marinade over kabobs; marinate 20 minutes.
Grill kabobs on high 1 to 2 minutes per side (4 sides), basting frequently with marinade.
Check for doneness. If not done, reduce heat to low and close lid. Cook approximately 2 minutes longer without turning skewers.
