Ingredients:
3 tbsp. olive oil, divided
2 cups sliced mushrooms
Fresh thyme sprigs; salt
4 portion-sized Dolly Varden (Charr) fillets
1 cup fish or vegetable stock, divided
1 tsp. soy sauce
Heat 1 tbsp. oil in a small skillet until a blue haze forms. Add mushrooms, 2 sprigs thyme and a pinch of salt. Stir-fry over high heat until tender; transfer mushrooms and pan juices to serving plate. Add remaining oil and heat until a blue haze forms. Add fillets. Cook over high heat, 2 to 2 1/2 minutes per side, turning occasionally to lock in flavour. Place fillets over mushrooms. Add stock, soy sauce and 2 thyme sprigs to skillet, cook and stir until reduced by half. Adjust seasoning to taste; pour over fillets and serve immediately. Makes 4 servings.
