Serves 4
4 trout, gutted
Flour
Salt and Pepper
3 oz (75g) butter
3 1/2 oz (100g) streaky bacon, cut in small pieces.
Dust the trout with flour and season with salt and pepper. Put them in a large frying pan and add the butter. Remove carefully when cooked and keep warm. Add the bacon to the butter and fry until brown. Pour the bacon fat and bacon over the cooked trout and serve
